Cooking for a Sick Friend?

I'm always at a loss when it comes to make ahead meals for someone who has just come home from the hospital.  I want things that reheat well and something that isn't lasagna (since that is what most people bring).

My sister in law was discharged from the hospital this week and I needed to come up with some meals for her family so I thought  I'd share.

Sausage Bowtie Casserole is made from bow tie pasta, Bob Evans sausage, spinach and vodka sauce.  Thank you to my cashier at Walmart who gave me this recipe! Include a loaf of fresh bread and you have a meal.

Chicken Meatball Soup, for something a little gentle on the stomach.   It was simple, using carrots, celery, chicken broth, a rotisserie chicken, tiny meatballs meant for wedding soup (I can find these premade at a local grocery store), and Acini de Pepe (those tiny pasta balls) but you could also use Orzo pasta.

I also made a Meatloaf (isn't that an unfortunate name for a food??) using my standby Joy of Cooking recipe, but any recipe will do.  Be sure to include mashed potatoes and a veggie!

Macaroni and Cheese was my final meal. I like Cook's Illustrated Macaroni and Cheese, with a salad.

I rounded everything out with a tray of M & M Cookies and a Jello Pretzel Salad from my neighbor.

What are your stand by meals to deliver to friends in need?  I need to increase my list of recipes for next week!

What kinds of meals have you enjoyed that have been delivered to you?

  1. Wow - all of that sounds wonderful. when I had my second baby a friend brought by this wonderful chicken she had no name for - so I named it Wonderful Chicken. Wrap lean-ish bacon around smallish chicken breasts (6 or so?)and place in a casserole dish. Mix 1 can cream of something soup with 1 small container sour cream and slather it over. The baking time is appox. an hour, depending on the size of the chicken breasts. Serve with rice or mashed potatoes and a side salad. I think I wept while I ate it - starving and boobs hurting. It was so good. (:

  2. My go-to is a Poppyseed Chicken Casserole. You shred a rotisserie chicken and put it in the bottom of your casserole dish. Then, mix 1 cup of sour cream with 1 can cream of chicken soup. Layer that on next. Crush 2 tubes of Ritz crackers, then mix them up with 1 stick of melted butter and 2 tbsp. poppyseeds. Layer that on top. Bake at 350 for 40-45 minutes and serve over rice. It's always a big hit.
