Soul Sisters Getaway - Greek Frittata Recipe
As you might remember from last year, the Soul Sisters Getaway is always scheduled at the beginning of November and this year was no exception. We all arrived stressed and ready for some fun! I will share the many projects we completed this weekend later this week, but for now I will share a new breakfast recipe we tried.
Greek Frittata:
Ingredients:
1 small onion, diced
1 clove garlic, minced
1/4 cup Greek olives, pitted and diced
1 med. tomato, diced
Cook these ingredients with a tablespoon of oil until onions are soft.
Meanwhile, stir together
12 eggs
2 oz. Feta cheese
1 tsp. basil
Add the eggs to the olive mixture and allow the bottom to set. Lift the edges to let the uncooked portion of eggs flow underneath, as you would with an omelet. When the eggs are almost cooked, pop the pan in a 400 degree oven for 5 minutes to set the top.
Serve with Italian toast, fresh squeezed orange juice and girlfriend giggles!
