I was looking for a new Snickerdoodle recipe online yesterday and stumbled upon a bar cookie version on BackforSecondsBlog.
They. Are. Amazing.
They are like a chewy cinnamon brownie! I had to share:
Snickerdoodle Bars

Ingredients:
1 Stick unsalted butter, softened
1 cup brown sugar
1 egg
1/4 tsp salt
1 tsp. baking powder
1 tsp. vanilla
1 1/3 cup flour
Preheat oven to 350 degrees.
Cream butter and sugar, then add egg, salt, and vanilla mix well.
In a separate bowl, mix the flour and baking powder, then add slowly to the butter mixture until incorporated.
Spread dough into the bottom of a greased 9x9 pan.
Mix together 1/8 cup sugar and 2 tsp. cinnamon then sprinkle evenly over top of dough.
Bake for 20 minutes until toothpick inserted in center has fudgey crumbs clinging to it.
Let cool...or not...
Try not to eat 3 of them 5 minutes before dinner is served (I failed at this step!)
