Easy Weeknight Meal


These last few weeks of school are super crazy. Can I get an AMEN? Sports, end of the year parties, school wrap up activities...we need some easy weeknight meals! Here is a great one for one of those convenient rotisserie or left over chicken.

Pulled Chicken BBQ Sandwiches

Rotisserie or leftover chicken
1 small onion
1 cup BBQ sauce
1/4 cup cider vinegar
Buns

Saute diced onion with 1 Tbsp. oil in sauce pan.

Meanwhile, shred chicken. Once onion is softened and lightly brown (about 5 min) add chicken, BBQ sauce, and vinegar. Simmer 10 minutes or until warmed through.

Spoon BBQ chicken onto buns and serve with a salad or fruit.

Easy peasy! Now...don't you have baseball practice tonight?

  4. YUUUUM! I'm flagging this one for sure, my husband is a Kentucky boy and firmly believes that main courses should be shredded and drowned in barbeque sauce. :)

    Thanks for your comments on the necklace, I was so pleased! Finishing a project well is a little bit of a high probably. Oh well, it's a good legal one. :)

  12. I love me some pulled chicken sandwiches! I have a similar recipe. Takes longer tough. I will definitely try this one. The easier the better.

  13. Hey! That's what we had tonight! Your idea is great. I buy an entire pork loin and cook it in the crock pot with just salt, pepper and a little water. Pull it apart once it's done and add bbq sauce. THEN I divide the leftovers into quart sized freezer bags and thaw later for a super quick weeknight meal.
